The origin
Somewhere, long ago, someone left sweet tea on a windowsill and forgot about it. Wild yeast and bacteria found purchase in the sugar. Something grew. Several weeks later, someone tasted it anyway.
That decision — trusting the living thing over the fear of it — has been passed between human hands for over two thousand years. From the Qin Dynasty courts of ancient China, where it was called the Tea of Immortality. Along the Silk Road. Into the kitchens of Eastern Europe. Into a bedroom in 1995. Into Whole Foods.
